- Halve the bell peppers, remove the seeds, and cut into strips.
- Finely chop the onion and mince or crush the garlic. Cut the cauliflower into small florets.
- Rinse the lentils well under running water and chop the walnuts into pieces.
- Heat 2 tablespoons of olive oil in a pan and sauté the onion and garlic, then stir-fry the cauliflower florets and bell pepper strips. If necessary, add about 150 ml of water and let it simmer briefly to soften the cauliflower. Next, add the Italian herbs.
- Toast the walnuts and lentils in another pan.
- Pour the passata over the lentils and season with pepper. Heat everything through thoroughly.
- Divide the cauliflower and bell pepper mixture between 2 plates and spoon the lentil sauce on top. Sprinkle with the feta and enjoy.
