  1. Halve the bell peppers, remove the seeds, and cut into strips.
  2. Finely chop the onion and mince or crush the garlic. Cut the cauliflower into small florets.
  3. Rinse the lentils well under running water and chop the walnuts into pieces.
  4. Heat 2 tablespoons of olive oil in a pan and sauté the onion and garlic, then stir-fry the cauliflower florets and bell pepper strips. If necessary, add about 150 ml of water and let it simmer briefly to soften the cauliflower. Next, add the Italian herbs.
  5. Toast the walnuts and lentils in another pan.
  6. Pour the passata over the lentils and season with pepper. Heat everything through thoroughly.
  7. Divide the cauliflower and bell pepper mixture between 2 plates and spoon the lentil sauce on top. Sprinkle with the feta and enjoy.
